Apricot & Coconut Slice


225g crushed biscuits (Digestive or Rich Tea)

175g ready to eat dried apricots (or cherries if preferred) finely chopped

125g dessicated coconut

125g unsalted butter

1 can condensed milk

175g plain or milk chocolate

50g white chocolate
 

Method

  1. Lightly grease and line a shallow tin (20cm x 30cm)
  2. Mix together biscuits, apricots and coconut in a large bowl
  3. Melt butter and condensed milk until smooth - be careful not to let it burn
  4. Mix into the crumb mixture and spread in to the prepared tin pressing down evenly

To decorate

  1. Melt the chocolate and spread evenly over the biscuit base
  2. Whilst still warm, melt the white chocolate and dot it over the top, swirl in to the milk or plain chocolate.
  3. Cut into slices and refrigerate until set.
