
Apricot & Coconut Slice
225g crushed biscuits (Digestive or Rich Tea)
175g ready to eat dried apricots (or cherries if preferred) finely chopped
125g dessicated coconut
125g unsalted butter
1 can condensed milk
175g plain or milk chocolate
50g white chocolate
Method
- Lightly grease and line a shallow tin (20cm x 30cm)
- Mix together biscuits, apricots and coconut in a large bowl
- Melt butter and condensed milk until smooth - be careful not to let it burn
- Mix into the crumb mixture and spread in to the prepared tin pressing down evenly
To decorate
- Melt the chocolate and spread evenly over the biscuit base
- Whilst still warm, melt the white chocolate and dot it over the top, swirl in to the milk or plain chocolate.
- Cut into slices and refrigerate until set.
