Delicious Coconut, Cherry & Lime Cake...

Ingredients:

75g (3oz) desiccated coconut
200g (7oz) butter, room temperature
200g (7oz) Caster sugar
250g (8oz) self raising flour
200g (7oz) glacé cherries
Oil for greasing
Grated rind of 2 limes
4 eggs beaten

To finish:

75g (3oz) glacé cherries
150g (5oz) icing sugar
Squeezed juice of 1 lime
2 tbsp desiccated coconut

Method:

  1. Set the oven to 180°c/350°f/Gas mark 4
  2. Grease and line a 2lb loaf or 7” square deep cake dish
  3. Mix butter and sugar until light and fluffy
  4. Add alternate spoonfuls of egg and flour to the butter, mix well after each addition
  5. Rinse cherries in cold water and pat dry with kitchen paper – cut them into quarters and toss with the coconut and lime rind
  6. Fold in to the creamed mixture gently
  7. Spoon into the lined tray and bake for 45 – 55 minutes until well risen and golden brown and a skewer comes out cleanly when pushed into the centre of the cake. (It may take a little longer with the loaf).
  8. Leave the cake to cool for 10 minutes, then turn out on to a wire rack to cool.

To decorate:

  1. Sift icing sugar & mix with lime juice to create a smooth glacé icing
  2. Spoon on top of the cake allowing it to drizzle down the sides
  3. Sprinkle with coconut & decorate with cherries.
