
Delicious Coconut, Cherry & Lime Cake...

Ingredients: 75g (3oz) desiccated coconut |
To finish: 75g (3oz) glacé cherries |
Method:
- Set the oven to 180°c/350°f/Gas mark 4
- Grease and line a 2lb loaf or 7” square deep cake dish
- Mix butter and sugar until light and fluffy
- Add alternate spoonfuls of egg and flour to the butter, mix well after each addition
- Rinse cherries in cold water and pat dry with kitchen paper – cut them into quarters and toss with the coconut and lime rind
- Fold in to the creamed mixture gently
- Spoon into the lined tray and bake for 45 – 55 minutes until well risen and golden brown and a skewer comes out cleanly when pushed into the centre of the cake. (It may take a little longer with the loaf).
- Leave the cake to cool for 10 minutes, then turn out on to a wire rack to cool.
To decorate:
- Sift icing sugar & mix with lime juice to create a smooth glacé icing
- Spoon on top of the cake allowing it to drizzle down the sides
- Sprinkle with coconut & decorate with cherries.
